I was thinking of getting an R7 with the hope to modify it for a better top speed. Any suggestions on getting me there? Sprockets and chain, exhaust, ECU flash? And what products are durable and fit well?
Would a 40/17 gearing help me out? Stock is 42/16. How much would the new gearing add?

As it is stock, the gearing is already too tall to reach redline in 6th gear (unless going downhill and/or strong tailwind). Taller gearing will only make the bike slower. If you want a higher top speed, you either need to reduce aerodynamic drag or increase horsepower. Other than removing the mirrors and turn signals, and finding a windscreen that reduces drag, there isn't much you can do to reduce drag (assuming you're fully tucked in). Increasing horsepower isn't all that difficult but it isn't cheap and it requires an integrated approach. There are many posts on increasing HP on the FZ07.org forum but its been down over a week now. My superbike build CP2 motor has 92 rwhp (SAE corrected) and if geared for top speed, will go over 140mph but if you don't know what you're doing (porting head, boring throttle-bodies, cams, Hordpower intake, aRacer ecu, Yosh pipe, race gas) you'll spend $8000-10,000 for a motor like that.

Wrong bike for top speed....
